I’m always looking for grab-n-go breakfasts and snacks that taste amazing and keep our family satisfied! I’m so excited to share with you guys these Orange Cinnamon Sweet Potato Muffins! These muffins can be made over the weekend, so they are ready for you to eat throughout the week. The best part about these muffins is they are made with real, whole ingredients and are packed with vitamins and minerals!
Store bought muffins are processed and loaded with added sugar, which can give you a quick energy spurt and then leave you tired the rest of the morning. These muffins are lightly sweetened and contain fiber, which means things move slower through your blood stream, keeping your energy levels study. The fiber also helps to keep you full until the next meal or snack!

Orange
Did you know that one orange contains roughly 80% of your daily vitamin C? This is great for supporting your immune system, especially during the winter months! Oranges are also super hydrating and even contain 3 grams of fiber! Fiber is wonderful for digestive health and regulating blood sugar.
Sweet Potato
Sweet Potatoes are loaded with beta-carotene, which is an antioxidant that converts to vitamin A in your body and is great for healthy vision. Beta-carotene is also what gives sweet potatoes their bright color. Vitamin A is also great for immune health and gut health!
Cinnamon
Cinnamon may contain anti-inflammatory properties which could lower your risk of certain diseases. It also may lower blood sugar levels and even delay gastric emptying. Cinnamon has even been used to fight certain bacterial and fungal infections.

Orange Cinnamon Sweet Potato Muffins
Ingredients
- ¾ cup Limoneira® navel orange juice
- ½ cup sweet potato puree
- 2 eggs or vegan egg replacer
- 1 cup baking flour of choice
- ½ cup blanched almond flour
- ½ cup sweetener of choice
- 1 teaspoon baking powder
- 1 ½ teaspoon cinnamon
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl, add eggs, sweet potato puree and orange juice. Whisk to combine.
- Add sweetener, almond flour, baking powder and cinnamon. Mix to combine.
- Add in baking flour and stir to combine.
- Scoop mixture into lined muffin tin. Bake for 30 minutes.
- Allow muffins to cool, top with zest and enjoy!
