Lemon Banana Popsicles

Cool, luscious popsicles are the perfect accompaniment to warm, sunny days – at the same time, they’ll brighten up even the dreariest day. Our version uses Greek yogurt and fresh fruits to create a frozen snack that’s not only delectable, it’s good for you too.

Ingredients
  

  • 2 1/2 cups Greek yogourt
  • 1 1/2 Limoneira® lemons zest & juice
  • 2 ripe bananas
  • 2 1/2 tablespoons maple syrup
  • 1 teaspoon cinnamon

Instructions
 

  • Mash the bananas, and process to a puree.
  • Stir in the yogourt, lemon zest and juice until thoroughly blended.
  • Add the honey and cinnamon, adjusting to taste.
  • Divide the mixture between your popsicle moulds, and pour in, leaving a little room at the top. As it freezes, the liquid expands. Refrigerate.
  • If your moulds do not include a slot for the stick, you’ll want to let them freeze for about 2 hours – just enough so that you can easily insert the popsicle sticks in the middle.
  • Freeze for a total of at least 4 hours.
  • To easily remove them when you’re ready to eat, just run the mould under warm water for 20 to 30 seconds.
  • For long term storage (up to 3 months in the freezer), place the popsicles into ziplock freezer bags, taking care to remove all the air you can before sealing.

Notes

Note: You’ll need to pre-purchase silicone popsicle moulds. This recipe makes up to 8, depending on the capacity of the individual moulds. Some moulds have slots where you will insert the sticks before you pour in the fruit/yogourt mixture.
