Star Ruby Grapefruit Sugar Cookies with Icing

Classic sugar cookies get a boost of tangy flavor and rosy blush from Star ruby grapefruits. Add a luscious frosting made with white chocolate and grapefruit, and the humble cookie becomes an upscale treat. Perfect for weekday lunches or weekend brunches.

Ingredients
  

Cookies:

  • 1 1/2 cups granulated sugar
  • 1 cup butter softened
  • 2 large eggs
  • 2 tablespoons ruby grapefruit zest
  • 2 tablespoons ruby grapefruit juice freshly squeezed
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon table salt

Icing:

  • 1 cup white chocolate chips
  • 1/2 cup confectioners sugar
  • 1/2 cup butter softened
  • 2 tablespoons ruby grapefruit zest

Instructions
 

Cookies:

  • Preheat oven to 350 degrees Fahrenheit. Very lightly grease a light colored baking sheet.
  • Add the granulated sugar and grapefruit zest to a large bowl. Using the back of a spoon, or your (clean) fingers, work the zest into the sugar until it is evenly distributed. The oils from the zest should start to flavor the sugar.
  • Now add the butter to the bowl, and beat until the mixture is flight and fluffy in texture.
  • Add the eggs one by one as you continue to beat.
  • Now add the grapefruit juice, beating until the mixture is thoroughly combined.
  • In a separate bowl, measure the flour, baking soda, baking powder, and salt. Stir together to evenly distribute.
  • Add the flour mixture to the wet ingredients one-third at a time, stirring until just combined between additions.
  • Cover the bowl and refrigerate for about two hours.
  • Once the dough is chilled, take a tablespoon full, and roll into a ball. Flatten the ball to form a cookie.
  • Bake in the oven for about 8 minutes. They should be only slightly browned around the outside edges.

Icing:

  • Melt the white chocolate chips slowly over a medium low setting in a double-boiler, or in a microwave.
  • Once it is fully melted, remove from the heat and partially cover, leaving a space open for it to cool slowly as you prepare the rest.
  • Combine the sugar and butter in a large bowl until the mixture is smooth and fluffy in texture.
  • Beat in the grapefruit zest.

Notes

Note: You’ll need 2 to 3 Star ruby grapefruits to get enough zest and juice for both the cookies and icing.
